Picnic loaf with goats’ cheese, pesto and grilled vegetables

This versatile recipe can be altered to include your favourite ingredients such as grilled aubergine, mushrooms or mozzarella cheese.

1 round loaf of white bread or ciabatta

3 red peppers, halved and cut into quarters

Good splash olive oil

2 large courgettes, cut into thin strips

2 red onions, cut into wedges

About ½ jar of pesto

About five slices of goats’ cheese

12 basil leaves

 

 

 

 

 

 

 

 

 

1/ Preheat grill to high. Cut the top off the loaf of bread, and scoop out most of the bread from inside, leaving the outer crust. Put load to one side and discard or use to make breadcrumbs/feed the ducks

2/ Put the peppers, skin side up under the grill and cook until blackened, remove and put into a plastic bag until they cool then remove skins. Now brush the courgettes with oil, season and cook under the grill until golden. In a frying pat, heat a little oil and add the onion, season and cook until softened

3/ Now assemble the loaf: Spread about half of the pesto around the inside of the loaf, top and bottom, then layer the peppers, courgettes, onion, goats’ cheese and basil leaves. Make sure the goats’ cheese is in the middle of the loaf, with the remaining pesto, and replace the lid of the loaf. Wrap it tightly in cling film, and weigh it down with something heavy. Put in the fridge to chill overnight. When ready to serve, cut into wedges.
